Research Interests:

1. Physical modification of starch

The effects of non-thermal physical modification techniques such as ultra-high pressure, plasma and ultrasonic on the multi-scale structure and properties of starch were studied, and the physical modification mechanism of starch was revealed.

2. Preparation and properties of starch complex

The influencing factors on the formation of complex between starch and fatty alcohols, lipids and non-starch polysaccharides are studied, revealing the formation mechanism of complex. The physicochemical properties, in vitro digestibility and GI value of the complex are studied to apply it in functional food.

3. Processing technology of functional polysaccharides in main foods and fruits

The isolation, extraction and function of mushroom polysaccharide, hawthorn polysaccharide and sweet potato polysaccharide.

4. Green synthesis of nitrogen heterocyclic ring

Metal-free oxidative functionalization of C-H, C-C and C-X bond are studied to synthesize complex nitrogen-containing heterocyclic compounds, and their biological activity are evaluated.
